5 hours This course gives food teachers the opportunity to examine sound scientific practice and academic rigour whilst exploring the working characteristics, chemical and functional properties of ingredients. After completing and reviewing a series of scientific controlled activities, delegates will undertake preparation of savoury recipes to refresh their skills base and implement some of the morning’s learnings.
